Cranberry Apple Risotto
Ingredients:
(yields 8 servings)
- 1 cup short grain rice
- 1/2 cup glutenous rice
- OR - - 1 1/2 cup of arborio rice
- 2 cups of cranberry ginger ale
- 2 cups of apple juice
- 1 cup of water
- 1/4 cup cranberries
- 1/4 cup raisins
- 1 apple thinly sliced
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 2 tablespoons butter
- 1/4 cup brown sugar
- Combine ginger ale, apple juice and water and keep it handy.
- Heat skillet. Throw in butter and then rice. Liberally mix rice and butter to it coats and begins to brown. Add cinnamon.
- Add three cups of the liquid mixture 1 cup at a time. Stir rice and liquid until the liquid is absorbed before adding more liquid.
- Add remaining water to rice cooker. Pour in rice mixture. Add remaining ingredients, stir and allow to cook in the cooker.
- Serve topped with yogourt or maple syrup.
